Wines to go with fish
Mild fish, eg lemon sole, suits a classic white like Pinot Grigio or Soave. Oily and meaty fish can handle bold flavours: rosé with salmon, a young Rioja with a rich cod and chorizo stew, and Albariño for mackerel and sardines. Muscadet or fizz work wonders with seafood – and for a fish and chip supper, Champagne is a treat.
