Rack of lamb with herb crust

The combination of rosemary, mint and parsley brings an uplifting fresh taste to a beautifully cooked piece of lamb. The subtle spice notes in the wine are bought to the forefront of the palate by the hints of coriander in the crust. The meaty texture of the lamb matches perfectly with the ripe fruit notes of the wine, which are layered with fragrant violet tones.

Serve with garlic Boulangère potatoes, which is a lighter alternative to potatoes Dauphinoise.
