    Ayala

Ayala is based in Aÿ, at the heart of the champagne region. Ayala's roots date back to over 150 years ago.

Edmond de Ayala, established the champagne house in 1860. During the 1920's over a million bottles of Ayala were produced.

During the Second World War, Ayala, took a step back and produced small batched of quality champagne.

In 2005 Bollinger purchased this fine estate and started to restore it to it's former glory.

Caroline Latrive is the chief winemaker at Ayala and has been since 2006. Caroline brings a wealth of experience and ensures that the house style is maintained by focusing on quality rather than quantity.
