When I first visited the family-owned bodega, I was greeted by Fermin Hidalgo, a man with a permanent smile and easy charm, who seemed to embody the essence of Jerez and southern Spain, where the real things to be cherished are not the things you have, but the things you have done. He showed me where this sherry ages – in uniquely designed large, airy cathedral-like warehouses with big windows and interior courtyards, all of which helps control the humidity, freshness and exceptional taste of the wine (no wonder he has a permanent smile!).
