Pecorino is a wonderful white grape variety which delivers crisp, fresh, lemon- and peach-scented wines. Fenaroli’s grapes are hand-harvested from lower-yielding vines, higher up in the hills (hence ‘Superiore’), where they have more depth of flavour and weight on the palate. When I am in the region blending, I always eat fresh seafood, washed down with this Pecorino. And when at home, I pair it with Friday-night fish and chips – its bright, refreshing acidity cuts through the batter and its rich, peachy flavours are intense enough to stand up to the supper.
