Silver linings
Based in the Hunter Valley, Australia’s oldest wine region, Tempus Two sources fruit from the country's premium grape-growing regions to craft wines with both substance and style. The team, including winemaker Andrew Duff (pictured), pride themselves on attention to detail in everything – a philosophy that has seen their wines admired around the world.
The Cabernet Sauvignon used in the Silver Series is sourced from select vineyards within South Eastern Australia to create a modern, contemporary wine that's fresh, vibrant and fruit driven. The grapes are fermented on oak at cool temperatures which allows the flavours to fully develop and retain their varietal characteristics. After fermentation, most of the wine is matured in stainless steel tanks, with a percentage transferred onto French and
American oak.
All of this produces a well-balanced, smooth, full-bodied wine that leads with wonderful flavours of blackberry and plum, followed by spicy notes of cinnamon and clove – making it ideal with slow-braised lamb, beef bourguignon, or vegetable chilli.
