Cognac is brandy made in the Charentes region in Southwest France. Produced mainly from the Ugni Blanc grape, it's distilled twice in a traditional pot charentais. After the ageing process in oak barrels, the cellar master blends a selection of aged 'eaux de vie' to produce the best-tasting Cognac possible. The labelling of the different expressions follows; however, most Cognac producers typically blend Cognac older than the minimum requirement. VS (Very Special) has a minimum of two years' ageing, VSOP (Very Special Old Pale) four years and XO (Extra Old) six years
