This style is said to have come about by accident. Barrels of wine transported by ship for long, hot journeys developed a unique cooked character. This heat is replicated during production, making wines with a range of sweetness levels. Fortification combined with naturally high acidity ensures these are the most long-lived of all wines. Each will last for months, even after opening.
